Go to tripadvisor.com and find the forums for specific travel and you will be able to read a zillion reviews on all the resorts in these areas. Cabo is expensive while Cancun is more of a party type atmosphere but with a ton of excursions and tours that can be done. On TA I’ve read a lot of great reviews for a resort that I was called Golden Crown Paradise but has since changed it’s name. But seriously, those Trip Advisor forums are great! From the home page you will need to do some navigating to find the forums although there might be a search bar somewhere on that home page. I’ve been using Trip Advisor for several years now.
In Cancun and Riviera Maya I will recommend you The Grand Mayan it is the best of the the best. It has been built by the biggest timeshare operator in Mexico, Mayan Resorts.
We stayed at Riviera Maya’s Barcelo and it was a very good experience, good food, good service, good premises…

For Los Cabos, I would say the Dreams resort. It was a lot of fun.
